An in vitro Evaluation of Pleurotus ostreatus EM-1-modified Maize (Zea mays) Cob as a Non-conventional Energy Source for Livestock in Ghana
Treatment with Pleurotus ostreatus strain EM-1 recently has been proposed as an effective means of transforming maize cob into nutritive animal feed for livestock production in the West African sub-region. -
Microbial deterioration of white variety sweet potato (Ipomoea batatas) under different storage structures
Post-harvest protection of white variety sweet potato (Ipomoea batatas) has been dealt with rarely in the past, although it is comparatively easy to grow and has high consumer acceptability in Ghana. Microbial deterioration of sweet potato roots stored in three different storage structures was studied. -
Ghanaian cocoa bean fermentation characterized by spectroscopic and chromatographic methods and chemometrics
Export of cocoa beans is of great economic importance in Ghana and several other tropical countries.Rawcocoa has an astringent, unpleasant taste, and flavor, and has to be fermented, dried, and roasted to obtain the characteristic cocoa flavor and taste. -
Globalization vs. localization: global food challenges and local solutions
The objective of this study was to examine the effect of global–local interactions on food production and consumption in Ghana, and identify possible local solutions. Primary data were collected using a combination of quantitative-qualitative methods, which included focus group discussions and one-on-one interviews. -
A review of osmodehydration for food industry
As a cost saving drying technology, osmotic dehydration is not receiving much attention in the food industry due to the poor understanding of the counter current flow phenomena associated with it. Therefore, it is very important to investigate the underlying principles of the counter current flow to improve industrial implementation of the technology. -
Starch Hydrolysis Kinetics of Intermediate Wheatgrass (Thinopyrum intermedium) Flour and Its Effects on The Unit Chain Profile of Its Resistant Starch Fraction.
Background and objectives Intermediate wheatgrass (IWG) is an environmentally sustainable perennial crop with potential food applications. This study investigated the starch hydrolysis kinetics of IWG grown in Roseau (IWG-RS) and Rosemount (IWG-RM), Minnesota, USA and the molecular structure of their residual (resistant) starch after 2 hr hydrolysis. -
