Susceptibility of steeped and heat dried cowpea flour to fungal growth and aflatoxins production
In vitro studies were carried out to determine the susceptibility of flours from steeped and heat dried cowpea to fungal growth and aflatoxins production. A 2 x 7 factorial experimental design with 2 levels of steeping time of cowpea grain in water (0 and 3 min steeping) and 7 levels of drying temperatures of the grains ranging from 35 to 120°C were used for flour production. -

The status of fish diversity and fisheries of the Keta lagoon, Ghana, West Africa
The fish and fisheries of three fish landing sites around the Keta lagoon in Ghana have been studied. A total of 18 fish species belonging to 13 families were encountered in the study. Four of the species were found to be commercially important notably, the cichlids (Tilapia guineensis and Sarotherodon melanotheron), the Bonga shad, (Ethmalosa fimbriata) and the blue-swimming crab, (Callinectes amnicola). -

Laboratory interspecific competition and grain-hosts selection experiments involving maize weevil (MW), Sitophilus zeamais (Motsch.) and larger grain borer (LGB), Prostephanus truncatus (Horn) were performed under ambient temperature and relative humidity (25˚C - 35˚C and 70% - 80% relative humidity) in their major host cereal, maize grains. -

The mycelia growth rate, physical characteristics of first flush, number of flushes and biological efficiency of twenty three exotic strains of eight Pleurotus species grown on composted sawdust of Triplochiton scleroxylon K (Schum) were studied. -

Effect of fermentation method, roasting and conching conditions on the aroma volatiles of dark chocolate
The combined effect of two cocoa fermentation methods – heap and tray – and different roasting and conching conditions on aroma compounds of dark chocolate were investigated. Dynamic headspace sampling/gas chromatography-mass spectrometry (GC-MS) was used to isolate and identify aroma volatiles. -
