Food safety concerns of fast-food consumers in urban Ghana
In Ghana, out-of-home ready-to-eat foods including fast food generally have been associated with food safety problems. Notwithstanding, fast food production and consumption are increasing in Ghana and therefore this study sought to determine the food safety issues of importance to consumers and the extent to which they worry about them. -
Fast Food in the Greater Accra Region of Ghana: Characteristics, Availability and the Cuisine Concept
Fast food has been extensively debated but most studies have focused on one or two of its characteristics. Using the cuisine concept, we propose a more comprehensive approach to the study of fast-food characteristics and availability, while taking cultural context into account. The objectives of this paper are to explore the usefulness of the cuisine concept and to provide some insight into fast food characteristics and its availability in the Greater Accra Region (GAR) of Ghana. -

The objective of this study was to examine how convenience (a measure of perceived product convenience, which is a product attribute, and convenience orientation, a psychosocial attribute of consumers) together with demographic variables and cooking skill influence fast food consumption in urban Ghana. -

Consumers often depend on public institutions to provide safe and healthy food. Thus, trust in these institutions becomes an important consideration for food consumption. The objective was to examine the relationship between consumer trust in relevant government institutions and consumer perception and concern about fast food safety and healthiness. -

Diagnosing institutional logics in partnerships and how they evolve through institutional bricolage: Insights from soybean and cassava value chains in Ghana
Trade globalisation and climate change pose new challenges for food security in Africa. To unlock smallholder productivity, more understanding is needed of the institutional context and the role of development interventions, such as partnerships, in the food sector. This article proposes institutional logics as a theory and methodology for institutional diagnosis to gain insight into context-embedded negotiation and change processes created by project-based partnership interventions. -
Does the current land tenurial arrangement in Ghana incentivize adoption of environmentally sustainable cocoa production practices? A case study of four selected cocoa growing districts in Ghana
A total of 231 cocoa farmers were interviewed through a structured survey in selected districts in the Eastern, Ashanti, Brong Ahafo and Western regions of Ghana to explore their views on how the existing land tenurial arrangement incentivise sustainable cocoa production practices. In addition, 12 key informant interviews and six focus group discussions were held.
