As a cost saving drying technology, osmotic dehydration is not receiving much attention in the food industry due to the poor understanding of the counter current flow phenomena associated with it. Therefore, it is very important to investigate the underlying principles of the counter current flow to improve industrial implementation of the technology.
Given the importance of cowpea [Vignaunguiculata(L)Walp] in fighting malnutrition and poverty, a socio-economic assessment of cowpea diversity found on the Ghanaian market was conducted. The objective was to investigate emerging consumer preference for cowpea and make recommendations for the development of tailor-made varieties.
The purpose of this study was to find out the amounts of charcoal consumed using the traditional Ghanaian coal pot in contrast with two improved stoves, "Ahinbenso" and "Gyapa" stoves.
